This sushi is so pleasing to the eye. The sushi filling is avocado wrapped in seaweed and rolled with the sushi rice. The sushi rice is then coated with ebikko which is prawn roe. The avocado gave the sushi a nice creamy taste while the seaweed was crispy. Loved the prawn roe which is bits of exploding pieces as you chew the sushi. I could taste the fresh ingredients which is such an important element in making any dish a success.
