The 2 most important criteria to meet in making a good hor fun is the soup base & the type of noodles used. Firstly, the soup lacks in the prawn & chicken taste resulting it to become quite tasteless. On top of that, the noodles should be especially smooth, fine and slippery hor fun, but they may have use another type of kuey teow commonly used for soup or fried version (char kway teow) that is broader, thicker and not as smooth as the original hor fun.
