I always have the same question when i went out for dinner, especially when i order for this dish, lam yu fry chicken. i like to cook and i had tried a few times to cook this but it had never look like this before.to cook this dish the chef must be very good in controlling the heat of the oil, if the oil is too hot it would probably make the chicken not cooked inside, but if the oil is not hot enough it could probably cause the chicken to be too dry as you will be frying it for a long time.This

This dish are just perfect, not over cooked and the lam yu that they are using is not too salty

if i were to rate this i would give 8/10
