I'm a big believer of protein, so when I intentionally opt for a vegetarian lunch, it usually means one of two things: I'm either trying to eat healthier, or the food is really good.When I eat at RAW Coffee, it's mainly because I like the food (the health bit is a bonus). When I eat at RAW Coffee, it's mainly because I like the food (the health bit is a bonus). My favourite sandwich on their menu is the grilled eggplant with mushroom pesto, in toasted rye bread (it comes with a side salad of the day).

The rye bread is crispy but not dry (I hate the way dry toast scrapes the inside of my mouth). I usually pick rye over ciabatta or other breads, just because I prefer a thinner wholesome bread. The grilled eggplant is tender and mushy, and flavoured with what I identify as olive oil, which gives it an extra aroma (and is good for health). The mushroom pesto is delightful - grilled just right to bring out all the natural mushroomy aroma and little accents of herby flavours.

The side salad depends on your luck - I like when I get the salad with bits of black sesame.
