我很喜歡來「富豪金殿」吃點心及小菜,一向出品有水準,亦是一班朋友來吃飯聚會的好地方。今次一行五人來吃午飯,餐廳環境一貫地光猛醒神,座位舒適:「富豪酒店」與「順德聚福山莊」聯成「傳承‧順德原味道」多款菜式,今回正好來品嚐此期間限定。佛山順德素有「食在廣州、廚出鳳城」的美譽,順德菜講求不時不食、不鮮不食,為的就是對新鮮食材品質的追求。而靠山吃山,靠水吃水更可說是完美融入於順德菜中。順德位處珠江三角洲中部,河流也多,令河鮮物產豐富,因此一向也有「魚米之鄉」之稱。順德人烹調河魚的方式也很多,清蒸、煎焗、煎釀⋯⋯等,同樣有著不同變化。「河鮮」顧名思義,就是生長在淡水河裡的魚、蝦、蟹,例如魚有鯪魚、 鯽魚、鯇魚、大魚、花錦鱔等,烹調方法多變,由魚皮到魚嘴、魚鰾到魚脊,每部份都可做成一道菜。先來一杯橙汁開開胃醒神:「點心拼艦 - 金殿鮮蝦餃 / 素咸水角 / 用園南瓜果」這裏蝦餃一向出名,皮薄蝦爽彈,每次來必點:咸水角有驚喜,炸到脆而不油:拉開順德菜的序幕。「順徳拆燴鮮魚羮」$288 (四位用,位上)懷舊心機菜之一。用刺多且細小的鰂魚,廚師要將魚刺逐一挑出,留下嫩滑魚肉,配搭用鮮魚熬成的魚湯及黃菊花等一同烹煮:除了魚肉,菊花,羮內還有絲瓜、欖仁等,口感豐富,味鮮優雅且順喉:「香煎順德鯪魚餅配巧手春花餅」$188鯪魚餅是順德人家常經典之作。取魚肉混入配料剁碎,打至起膠,煎出來的魚餅既香,入口彈牙全魚香:我也很喜歡巧手春花餅,用豬肉、韮菜、芋頭組合煎成細細件,非常惹味,韮菜香是精粹所在:「香菜煎焗勒流鱔」$568順德人喜歡用「煎焗」做法,也甚有科學智慧。顧名思義「煎焗」就是先煎後焗,廚師先用高溫迫出魚多餘油脂,使魚的肌肉組織出現空隙,以便焗時能夠更好地吸收汁料:此勒流鱔經過煎焗的洗禮,熱力和味道充分深入到魚肉的內部,魚肉增添香氣之餘也保持鮮香肉滑的質感,還有去掉泥味,精彩:「原條煎釀塘鯪魚」$338經典順德手功菜,新鮮熱辣造起。師傅先將鯪魚去掉內臟,沿肚鎅開切斷脊骨,再鎅開魚皮與魚肉,撕出魚肉,相當考功夫,否則撕爛了就功虧一簣。拆骨起肉後的鯪魚皮,毫無破損;魚肉則剁碎成蓉後以配料粒、陳皮粒、生粉、葱粒等拌勻,釀回魚皮中再煎熟,扣上豉汁,切段後砌回原狀:此菜既保留了鯪魚的鮮味,又不怕小朋友或老人家食用時骾骨,魚肉帶陳皮香,彈牙鮮味。「生碌醬油馬崗鵝」(一隻 $688 /半隻 $368)我們點了半隻:很久沒有吃「碌鵝」。「碌」的意思是將原隻鵝在鍋中不停翻滾 「碌來碌來」,沾上醬料烹煮,手法有趣之餘更為這道菜加添廣式味道。鵝肉甜香並重,鵝頭 (尤其鵝髻) 可以用來送酒吃呢。「傳統炸唃唃」$198這傳統美食是用肥豬肉、腰果及芋頭蓉,造成丸子,炸至金黃色。我第一次吃這個炸小丸子,鬆化帶有油脂香,吃起來腰果「唃唃聲」。平凡材料可以以心機造成如此美味,再一次顯出順德人的智慧。「黃金煎倫教糕」$138我驟聽覺得「倫教糕」甚陌生,原來它就係是「白糖糕」:糕切件用蛋汁煎香,內裡佈滿魚翅紋,吃下去鬆軟甜美,喚起我的童年小吃回憶。「手工鮮薑汁撞奶」$48要做到好的薑汁撞奶很考技巧,例如對煮牛奶的火候和溫度的掌握、對老薑的挑選等,全靠師傅的入廚經驗:此質感滑溜軟彈,滑且帶有濃郁薑香,吃飯復很暖胃。 continue reading

銅鑼灣「富豪香港酒店」最近邀請到順德有名食府----「聚福山莊」的大廚與該酒店「富豪金殿」的廚藝團隊交流,帶來一系列以「傳承‧順德原味道」為名的順德菜式,我與數位友人日前就來到「富豪金殿」,品嚐了多道「傳承‧順德原味道」的精彩菜式,大快朵頤一番。順德乃魚米之鄉,河鮮正是順德菜常用的食材,「原條煎釀塘鯪魚」($338)亦是順德手工菜的代表之一。這天一試,不禁令我想起疼愛我的外婆從前為我與家人下廚烹調的美味釀鯪魚。這工序繁複的手工菜式,鯪魚肉彈力十足,調味亦佳,吃來香口惹味,我與友人都相當喜歡。另一道以鯪魚入饌的菜式是「香煎順德鯪魚餅配巧手春花餅」($188/每款4件)。煎香了的鯪魚餅固然好吃,作為另一主角的春花餅同樣可口。兩者各有千秋,一樣美味。還有我最愛的「順德拆燴鮮魚羹」($288/4位用)呢!這美味魚羹真材實料,材料豐富,味道清甜,是在香港不多地方可以喝到,讓我十分想念的湯羹。這天在這裡可以喝到,特別讓我感到高興。「香菜煎焗勒流鱔」($568)以煎焗的手法烹調肥美的大鱔,大鱔比蒸的來得香口,味道挺好。「生碌醬油馬崗鵝」($688/隻)的原隻大鵝經在鍋中以醬油碌過之後,每件鵝都均勻地沾上了濃郁味美的醬汁,鵝肉實淨,甚有質感,是這晚除了河鮮之外,我們吃的唯一一道肉類菜式。一碟六件的「黃金煎倫教糕」($138)是順德有名的甜點,倫教糕的另一名字是白糖糕,顧名思義,白糖糕好應該是白色的,為何這天的白糖糕會是金黃色的呢?原來是因為這糕是以蛋漿煎過的,比沒有煎過的更添色香,爽滑的倫教糕,色澤金黃誘人,味道微甜不酸,是挺好吃的傳統粵式糕點。相比起倫教糕,我更喜歡的甜品是「手工鮮薑汁撞奶」($48/位)。這道順德有名的甜品用的是水牛奶,以薑汁撞出來的效果讓它特別地有柔滑如絲的質感,配以獨特的薑辣味,讓它成為我最喜歡的順德甜品。這天的「手工鮮薑汁撞奶」薑味稍濃,同座的一些朋友可能覺得薑汁味把奶味掩蓋了不少,但我就覺得相當不錯,甚對我的口味。這次的「傳承‧順德原味道」推廣期只由10月31日至11月30日,只在富豪香港酒店「富豪金殿」和富豪九龍酒店「富豪軒」供應,假如成為富豪薈會員的話,更可享有85折優惠,要是想一試順德名廚的手勢的話,就要早點訂座了。 continue reading

車媽媽並不是順德人但係份人都算幾順得人的哈哈!說到順德自不然就會想起美食,這夜有機會品嚐到富豪酒店與順德聚福山莊聯手呈獻的{傳承‧順德原味道},就在這天跟大家分享當晚的精彩的心機菜啦。可以品嚐到多款特色又正宗的順德美食真的叫人期待,事不宜遲這夜的晚宴要正式開始喇!第一道上檯的菜式是香煎順德鯪魚餅配巧手春花餅$188/每款4件。這個順德煎魚餅吃起來既彈牙又香口,可是一個絕佳的配酒小菜。另一件巧手春花餅以豬肉、韮菜和芋頭組合而成,入口帶幽幽韮菜味之餘更有肉香挺惹味。接力的是順德拆燴鮮魚羹$288/4位用,以鰂魚拆成粒粒魚肉配上鮮魚熬製成的魚湯,再加上欖仁、絲瓜等配料喝下口感很豐富。然後這一客是大良炒牛乳伴酥炸均安豬肉$188,這個順德第一大名菜炒得不瀉不焦顏色奶白,放入口嫩滑誘人而且營養超級豐富呢。伴隨的還有這件酥炸均安豬肉,帶香酥口感的五花肉混搭上香軟的炒牛奶真的非常匹配。緊接著這一碟菜有個很有愛的菜名,它的名字叫做骨肉團圓$268/4件說穿了即是一魚兩味!大廚先將魚肉弄成彈牙的魚丸然後再將骨腩位置一同蒸熟上檯,順德人就是有吃盡食材這樣不浪費的美德。然後來到我們面前的這一隻是鳳城鍋壁四杯雞$638/隻、$328/半隻,這隻是非一般的三杯雞除了三杯之外還加入了其他的調味料令味道更加鹹鮮!雞件吃下皮爽肉嫩味道香濃喜歡吃雞的朋友要試啊。這個酸梅一字骨$188味道酸酸甜甜非常開胃,墊底的子薑絕對不是省油燈記住要吃喔。然後來到這晚我最喜歡的一道菜式生碌醬油馬崗鵝$688/隻、$368/半隻,這個以碌來碌去的獨特煮法炮製的馬岡鵝菜式,鵝肉肉質細膩加上濃郁的醬油香氣確實滋味無窮。這客是濃魚湯雲勝浸魚皮角$238,煙靭有咬口的魚皮角配襯奶白魚湯總令人吃得舒適。愛吃煙靭入味糯米飯的朋友就必定要點這個漁鄉桂蝦炒糯米飯$238來品嚐,糯米飯煮至粒粒分明口感煙靭又入味,加上蝦乾等香口的材料會令人吃得很滿足。這個一粒粒很可愛的原來叫做傳統炸唃唃$198/6件,這個傳統的順德過節美食炸唃唃用了肥豬肉、芋頭及腰果來炸至香脆,吃下脆脆的挺可口同時亦很飽肚。這碗手工鮮薑汁撞奶只售$48/位,奶香十足之餘還很夠薑味道好不錯耶。最後還有黃金煎倫教糕$138/6件其實這件即是我們小時候經常吃到的白糖糕!煎過的白糖糕外層金黃香口內裏則潔白晶瑩,吃下口感爽彈味道清甜沒有帶上一絲酸味,喜歡吃白糖糕的朋友記得點來品嚐啊。傳承‧順德原味道菜單由即日至11月30於富豪香港酒店富豪金殿、富豪九龍酒店富豪軒供應,Regal Club、Regal Card會員及酒店住客可享85折優惠,想品嚐這順德原味道的朋友快些去訂檯喇。 continue reading
