係入住置地文華staycation前兩星期我地就去左amber食飯話說之前匯豐有得免費升級試用premier一年就出左張信用卡可以係幾間米芝蓮餐廳食飯買一送一文華東方係大戶三間米芝蓮都有份咁文華東方餐廳買一送一優惠就要每個月一號去搶未來兩個月既日子即係我想十二月去食飯就要係10月1日零時零分上網book以前已經食過文華廳同文華扒房所以今次就揀左amber可能年尾就唔太多人爭可以揀到個星期日去食不過時間只可以係八點後明明一間fine dining既full set閒閒地都應該食至少三個鐘應該就無可能做到兩輪晚市唔係好明咁夜先食既操作不過點都好咁都叫做可以用到一次張premier master既買一送一優惠啦amber米芝蓮兩星同綠色法國餐廳由richard ekkebus主理餐廳不過睇MM條片就好似主要由stanley poon負責餐廳門口就係somm既左手邊話說真係第一次夜晚食米芝蓮法國菜心情同當年第一次去食龍景軒咁緊張餐廳配色同酒店一樣都係金色同米色燈光昏暗頭頂係好多圈圈既燈飾座位多數都係梳化位望落餐廳都好多外國人黎食而且英文侍應比例起碼有八九成唯一聽過中文就只有侍酒師問我地既時候我地坐到餐廳最入面二人檯係比起其他大張不過檯面就未有餐具只得檯墊餐巾同壓縮毛巾檯面無鮮花擺左係檯邊餐牌因為買一送一優惠只有一個就係full amber experience8道菜2788但入面都仲有道和牛主菜要加錢先有除左八道菜仲有一道前菜一道petit four同埋蛋糕加埋係超過十道菜真係三個鐘都搞不掂前菜係蘑菇薄脆每人再配左杯膏狀既黑松露豆腐咸咸地正式第一道菜係油甘魚片amber既特色好多泡泡醬汁多數都係用植物整成再配埋色第二道就係amber最signature既魚子醬有專用貝殼匙羹午餐最平個set係食唔到既入面係赤海膽仲有金箔龍蝦啫哩個質感就好似最初果個豆腐前菜咁有跟一大塊海苔片可以筆一羹咁配黎咬不過塊海苔片好似太咸太重味賣相係好吸引但食落口有些少落差之後先上酸種麵包正正常常可以係用黎配肝醬所以第三道係鹿肝醬平時最怕就係呢類型食物偏偏高級餐廳就好鍾意呢味野未至於入唔到口不過真係唔識欣賞之後係連續三道主菜魚肉龍蝦肉雞肉餐具都換得幾密英文唔好聽唔清楚淨係聽到大概係本地魚呢碟真係用泡既極致魚肉切開係半熟口感配埋塊oyster leaf入口好特別魚就用綠色龍蝦就用橙色黎配除左植物汁仲有生果伴碟好似上湯咁有儀式感最後一道主菜係平原雞兩食其中一件係肉腸形狀用左唔同雞既部位去整成對比起雞胸係仲好食口感比較特出而另一道要加錢既和牛就無試到第七道菜就已經係甜品柚子雪芭但一樣用左好多樹葉生果配菜好似沙律咁樣食法不過例牌我都係覺得雪芭幾酸最後就上左呢件冬甩外型既蛋糕係官網見到原來amber係做埋酒店餅房有蛋糕賣呢一個叫做amber infinity cake係柚子朱古力蛋糕係網上商店都可以買到而黎得呢到食飯基本上每檯都係黎慶祝既係文華東方網上系統book檯就好輕鬆可以揀埋想慶祝乜野仲會得到一張手寫紀念卡真係儀式做到足不過蛋糕我地係完全食唔落所以侍應係你影完相都會問你會想拎走定係度食咁我就拎左番去第二日先食官網寫話係dairy free同gluten free既食落完全唔漏又唔會好甜最後一道90%黑朱古力就直接一齊上上檯之前再倒左幾滴蜜糖落去脆片到朱古力就好快溶要快d食餐飲咖啡都會擺張檯仔係你面前倒另一杯係侍應介紹既green tea連埋甜品都擺得很整齊其實最後仲有petit four既不過佢問左我地蛋糕拎走之後就問埋petit four拎唔拎走所以今次就無上檯直接上盒了慘貝殼蛋糕放左雪櫃都仲幾好食最後走果時仲有送左塊朱古力並唔係咬左啖而係咁既設計呢塊都幾濃味好似話等你記得amber既味度真係食足三個幾鐘已經早左七點幾黎都過左十一點先走原價加一而且無得揀tap waternordaq water即係同酒店房一樣果款一律每人30蚊雖然係買一送一但都要三千四落樓認真今餐就唔會覺得係食左陣風既因為都已經有太多道菜而且每一道份量都唔算太少顏色同畫面都吸引味道唔錯但就唔係食落口會好有驚艷嗯一聲果一隻成個晚餐就係好有儀式既一個體驗但唔知係身體唔好定食唔慣鹿既內藏啦臨走果時真係忍唔住要去左廁所之後番屋企都屙左幾獲服務係好專業既全程都係不亢不卑既態度唔會白鴿眼亦都唔會好求其有次斟水彈左少少上檯都即刻抹番雖然真係溝通不能同聽唔明係食得好拘謹架啦叫做試過一次啦不過又魚子醬又海膽又龍蝦又鹿肝最後仲有送埋原個蛋糕性價比又未算話好低既但我都唔係有錢到可以六七千蚊食一餐飯既地步所以平時都係食開lunch多大概以後都無咩機會可以做一道咁完整既菜式啦 continue reading

Amber位置於置地文華東方酒店7樓,香港米芝蓮二星餐廳,同時榮獲米芝蓮綠星餐廳。法國菜式以創新方法烹飪菜餚,餐廳裝潢由著名紐約設計公司Tihany Design設計,真正由內到外做到別出心裁高貴雅緻❤️最令人難忘招牌菜式 - Aka Uni, Cauliflower, Lobster Jelly, Daurenki Tsar Imperial Caviar,豐滿上層魚子醬配上龍蝦啫喱,鮮味震撼味蕾,加上北海島海膽入口即溶,再搭配上側旁海苔脆片,讓整個口感層次更為豐富齒頰留香。我與友人都選擇了Full Amber Experience,入到Kitchen Tour環節,參觀Amber廚房見到智能系統管理,有效提高工作效率與專業效能✨廚師即席下廚Oasis Grouper, Sugar Pea, Plankton, Hijiki, Kelp, Sea Lettuce, Oyster Leaf,石班魚以清酒醃味配以海藻、崑布、海洋微生物 Plankton等調製出汁醬,加上蜜糖豆提出甜味、搭以濱紫草與魚骨泡沫汁,整道菜鮮甜味美令人回味無窮。由嚴選食材到專注體現食物之純粹,可見廚師匠心獨運,追求卓越表現高水準發揮,絕不戲場!如此心思,我決定不久的將來一定會再來到訪👍🏻 continue reading

有啲唔好意思,咁遲先寫食評,只因為呢間餐廳已經公認為非常好嘅餐廳,所以當初寫嘅動機不大,因為真係好多人都知好嘅餐廳,所以根本使乜睇食評呢,唔使睇食評,都知道要過嚟食啦,而家只不過係,都想留低啲相,記錄返當時食嘅食物照片,進餐大概係2023年嘅六月,都真係一段時間啦,好想再去啊,不過一路都好忙,呢間餐廳真係不時都要去㗎,因為都耐唔耐就會轉Menu,下次有機會去嘅時候一定即刻寫食評😝文字唔多講啦睇相已經明晒,每一碟餸好有心機好有意思,我都覺得好似進入咗一個境界咁,尤其是有碟令我有一種打獵成功,然後有好餸食嘅感覺😂 continue reading
